Who doesn’t love mint and chocolate together? These no-bake brownie bites are a delicious spin on the raw vegan brownies I’ve been making for years.
For the mint flavour, I added a couple of drops of doTERRA peppermint oil for a decadent treat with all the benefits of this invigorating plant essence (peppermint reduces gas, bloating and indigestion; it also promotes healthy respiratory function and gives a feeling of energy when inhaled).
These raw vegan treats don’t last long in our house – I make 2-3 batches every week. They are great to grab when you’re on the go or to enjoy for breakfast with a smoothie . I hope you love them as much as we do… try not to eat the whole batch at once. 🙂
Chocolate Mint Brownie Bites
Ingredients
- 1.5 Cups Chopped Walnuts
- 1/3 Cup Raw Cacao Powder
- 20 Pitted Medjool Dates
- 1 tsp Vanilla Extract
- 2 tsp Water
- 2-3 Drops doTERRA Peppermint Essential Oil
- 1/2 Cup Shredded Coconut
Instructions

Grind the walnuts and cacao into a course flour in a food processor.

Add the pitted dates, vanilla, water and 2 drops of peppermint oil and process until the mixture turns into a sticky batter. Taste the batter and add more peppermint oil if desired, as well as more dates if the batter is not sticking together.

When you are happy with the consistency and flavour, scoop by the tablespoon and form into a ball, then roll the ball in the shredded coconut.
