This weekend was Thanksgiving here in Canada and I must admit I was a little stumped when it came to the food situation.
In the end I decided to bring some raw dishes of my own… I made maple syrup glazed sweet potato noodles, the raw chili from Matt Kenney’s “Everyday Raw” and… a beautiful APPLE PIE!!
The pie was a hit. The other dishes, not so much (My aunt stared at me uncomfortably with one eyebrow raised up to her hairline. “RAW chili? Did you say RAW chili?”)
Oh well. One step at a time, Bell family. Here’s the recipe for my pie.
Crust:
1.5 cups shredded unsweetened coconut
1.5 cups nuts of your choice (I used almonds)
.5 cup pitted dates
.5 tsp salt
In a food processor, combine the coconuts, nuts, and salt until fine. Add the dates until dough forms, and then press into a 9″ glass pie plate.
Filling:
6 cups of peeled & chopped apples (use a soft apple, like Golden Delicious)
Juice from ½ a lemon
1 cup of pitted, soaked, and drained dates
2 heaping tsp cinnamon
1/8 tsp ground cloves
1/8 tsp nutmeg
Combine 2 cups of the apples in your blender along with the rest of the ingredients. Blend well and pour the mixture over the remaining apples. Mix well.
Pour the apple mixture into your pie crust.
