I tweaked a chocolate cake recipe to create these delicious raw vegan brownies I’ve been eating every morning for breakfast! I can’t tell them apart from regular baked brownies, although it’s been a while since I’ve had one of those.
Raw Vegan Brownies
In a food processor, grind the walnuts and salt until fine. Add the dates until dough forms, then continue to add the cacao, vanilla, and water. Scoop out a tablespoon full of dough and roll into a ball, then pat down into a circular mini-brownie shape.
You can eat the brownies exactly like this or add the following cashew frosting on top.
Blend all ingredients in a VitaMix blender until combined. Spoon frosting on top of brownies and sprinkle with ground walnuts.
